    Eggplant is something I’m sure I love… yet I probably ate it once in the past two years (on an antipasto platter, it was delicious). I need to cook with it and eat it more! I love how this sounds, and will be sure to try it out.

    Eggplant with garlic and spices, cooked down to deliciousness–what’s not to love? And don’t worry about the presentation. The worst-looking food always tastes the best, right? :)
